RECIPE OF THE DAY October 29th, 2009

PUMPKIN CHILI

Ingredients
3 pounds ground beef
1 medium onion, chopped
2 cans (16 ounces each) hot chili beans, undrained
2 bottles (12 ounces each) chili sauce
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 cup canned pumpkin
2 teaspoons pumpkin pie spice
1 teaspoon salt
1 teaspoon sugar
1 teaspoon pepper
1 teaspoon chili powder
Directions
In a large Dutch oven, cook beef and onion over medium heat until no longer pink; drain. Stir in the remaining ingredients. Add water if desired to reduce thickness. Bring to a boil. Reduce heat; cover and simmer for 1 hour.

RECIPE OF THE DAY October 28th, 2009

Petrifying Popcorn Balls
Great for a healthy trick or treat!

Ingredients
12 cup(s) popped popcorn
3 cup(s) mixed dried fruit such as golden raisins, cherries, and chopped apricots and figs
1 1/4 cup(s) granulated sugar
3/4 cup(s) brown sugar
1 cup(s) corn syrup
1/2 cup(s) water


Directions
Toss popcorn and dried fruit together in a large, lightly oiled, heatproof bowl. Oil 2 waxed paper-lined baking pans and a long metal fork. Set aside.
Bring sugar, brown sugar, corn syrup, and water to a boil over medium-high heat in a medium saucepan fitted with a candy thermometer. Reduce heat to medium and cook until mixture reaches 260 degrees F.
Carefully pour the syrup over the popcorn mixture. Stir with the fork to distribute. Let sit for 1 to 2 minutes.
With well-oiled hands, form 3-inch balls, place on pans, and cool completely. Store in an airtight container for up to 4 days.

Pumpkin-Sage Cream Sauce

Ingredients
1 cup(s) heavy cream
1/2 cup(s) pumpkin puree
1/4 cup(s) fresh-grated Parmesan
16 fresh sage leaves, sliced into thin strips
1/2 teaspoon(s) salt
1/4 teaspoon(s) fresh-ground pepper
1 tablespoon(s) unsalted butter

Directions
Combine the cream, pumpkin puree, Parmesan, sage, salt, and pepper in a medium saucepan over medium heat. Simmer the mixture until slightly thickened, 10 to 12 minutes. Remove from heat and stir in butter. Toss with cooked pasta and serve immediately.

RECIPE OF THE DAY October 26th, 2009

Eggplant and Mozzarella Panini
A yummy fall treat, quick and easy!

Ingredients:
 olive oil
1 eggplant (cut into 1/4 inch slices)
1 cup marinara sauce
8 slices bread
8 slices of mozzarella


Directions:
1. Saute the eggplant in oil in a pan in batches.
2. Spread the marinara sauce over one side of each slice of bread.
3. Place a slice of mozzarella on each slice of bread.
4. Place the eggplant on half of the slices of bread and top with the other half.
5. Lightly brush the bread with olive oil and grill until golden brown and the cheese has melted.

Bagna Cauda


Ingredients
4 clove(s) garlic, peeled
4 tablespoon(s) (3/4 stick) unsalted butter
10 anchovy fillets, rinsed
1 teaspoon(s) kosher salt
1/4 teaspoon(s) fresh-ground black pepper
3/4 cup(s) extra-virgin olive oil

Dipping Ideas:
Carrots
Zucchini
Peppers
Fresh baked bread
Shrimp (cooked and deveined)

Directions
In a food processor fitted with a metal blade, process the garlic, butter, anchovies, salt, and pepper until blended, about 1 minute. With processor running, gradually add the oil until incorporated. Transfer the mixture to a small saucepan over low heat and cook until warmed through, about 10 minutes. Remove from heat and serve warm.

New York Deli-Style Mac & Cheese 





INGREDIENTS


1 pound elbow macaroni
Salt and freshly ground black pepper
3 tablespoons butter, plus additional for buttering toast
3 tablespoons flour
2 cups milk
1/4 cup spicy deli mustard
2 cups NY aged sharp cheddar, grated
1/3 pound deli pastrami, roughly chopped
3 slices rye toast, crumbled or coarsely chopped in a food processor


Pre-heat broiler to high or oven to 400°F.
Place a large pot of water over high heat and bring it up to a boil to cook the pasta. Once at a boil, add some salt and the pasta, and cook just shy of al dente. Head up – pull out a mug of starchy cooking water before draining the pasta.
While the pasta is cooking, heat a medium-size skillet over medium heat and add the butter. When the butter melts, add flour and cook about a minute. Whisk in milk reserved starchy water and spicy mustard, and bring up to a bubble. Stir in the cheese in a figure-eight motion, reserving enough to sprinkle on the top of the casserole, until it's all melted. Fold in the pastrami and season with salt and pepper to taste.
When the pasta is done, drain it well and combine with sauce. Pour into baking dish and top with reserved cheese and crumbled rye toast. Place in oven until cheese is brown and bubbling.

RECIPE OF THE DAY October 18th, 2009

Mushroom & Spinach Crepes with Goat Cheese and
 Balsamic Drizzle


Ingredients:
1 tablespoon oil
1 onion (sliced)
2 cloves garlic (chopped)
1 tablespoon butter
8 ounces mushrooms (sliced)
1 tablespoon thyme (chopped)
4 ounces spinach
salt and pepper to taste
1 splash dry sherry
1/4 cup balsamic vinegar
1 handful goat cheese (grumbled)

Directions:
1. Heat the oil in a pan.
2. Add the onion and saute until just starting to caramelize, about 5-9 minutes.
3. Add the garlic and saute until fragrant, about 1 minute.
4. Add the butter and let it melt.
5. Add the mushrooms and thyme and season with salt and pepper and saute until they start to caramelize.
6. Add the sherry and deglaze the pan.
7. Add the spinach and saute until it wilts.
8. Reduce the balsamic vinegar to a syrup like consistency in a small sauce pan.
9. Place some of the mushroom and spinach mixture into a crepe followed by some goat cheese and balsamic syrup drizzle and fold.

Greek Style Nachos



Ingredients:
4 whole wheat pitas (cut into wedges and toasted)
1 pound Greek seasoned ground lamb 
1 cup tzatziki
4 ounces feta (crumbled)
1/2 cup cucumber (sliced)
1/2 cup tomato (sliced)
1/4 cup kalamata olives (pitted and sliced)
1/4 cup mint (chopped)
Directions:
1. Assemble nachos.

RECIPE OF THE DAY October 15th, 2009

Mexican Stir-Fry


  • Ingredients
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 2 teaspoons canola oil
  • 1/2 cup finely chopped green pepper
  • 1/2 cup finely chopped sweet red pepper
  • 2 tablespoons minced jalapeno pepper
  • 3/4 cup water
  • 1/2 cup tomato puree
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon chicken bouillon granules
  • 1/4 teaspoon salt
  • Pinch cayenne pepper
  • 1-1/3 cups diced cooked chicken
  • 2/3 cup canned kidney beans, rinsed and drained
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese
In a large skillet, saute onion and garlic in oil for 3 minutes or until crisp-tender. Add peppers; saute until crisp-tender, about 2 minutes. Stir in the water, tomato puree, chili powder, bouillon, salt an cayenne; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Add chicken, beans and rice; heat through. Sprinkle with cheese. Yields2-4 servings.
